Braised flat beans in Tomato sauce

 Flat beans are perfect for braising, they hold their shape well and become wonderful tender. You will know when they have finished when they have lost their squeak.



3 tbsp olive oil

1 ½ onion, peeled and sliced

3 garlic cloves, chopped

1 tin chopped tomatoes

1 lb flat beans, trimmed and cut into ½ inch pieces

1 tbsp balsamic vinegar

2/3 cup halved green olives

Salt and pepper

2 tbsp feta or goat’s cheese


Heat 2 tbsp oil in a large pan, add the onions and season with salt, fry until onions are just turning brown.
Turn the heat down and add the garlic, and tomatoes plus ½ can water, stir well and add the beans, cover and cook for 20 minutes until the beans are tender.
Add the olives and the remaining oil, taste and season to taste.
Serve with crusty bread and goat’s cheese or feta if desired.
