Broccoli and Courgette Frittata

30ml butter
1 onion, chopped
2 – 3 courgettes, sliced
500ml broccoli florets
6 eggs
250ml grated scottish mature cheddar
salad to serve
1. Melt the pepper, in an ovenproof frying pan, saute the onions until soft, add the courgettes and broccoli and saute until almost cooked, remove from pan and set aside.
2. Whisk the eggs lightly and add salt and freshly ground , pour in the frying pan and fry over a medium heat for about a minute, so that the bottom sets.
3. Add the vegetables and fry for a few minutes, until the edges start to set, sprinkle the cheese over and place under a hot grill, cook for 3 – 4 minutes until the centre has set, slice into wedges and serve with salad.
