Spaghetti Squash and Cucumber Salad

Spaghetti Squash and Cucumber Salad
This makes a great refreshing salad, Spaghetti is low in calories, and my kids love it.
1 spaghetti squash, halved and seeded.
8 ounces of cherry tomatoes, halved.
6 ounces of pitted black olives, halved.
1 cucumber, sliced.
1 small red onion.
1 garlic, crushed.
¼ cup lemon juice.
1 tablespoon lemon zest.
¼ cup olive oil.
1 tablespoon garlic salt.
Ground pepper to taste.

1 : Preheat the oven to 175. place the squash halves into a baking tray with cut sides down.
2 : Bake in the oven until you can easily cut into the skin, about 30 minutes usually, then remove from the oven.
3 : With a fork scoop out the flesh of the squash into bowl, then let it cool.
4 : Toss the cooled spaghetti squash, tomatoes, olives, cucumbers, red onion, and garlic together in a large bowl until evenly mixed.
5 : Stir in the lemon juice and lemon zest together in a small bowl, slowly pour the olive oil into the lemon juice mixture while whisking vigorously. Season with the garlic and pepper, drizzle over the spaghetti squash mixture and toss to coat.
