Spaghetti Squash Cheesy Bread

1 tbsp olive oil
1 medium spaghetti squash, halved
½ cup grated parmesan
¼ cup cornstarch
1 tbsp olive oil
salt and pepper
2 large eggs
2 cloves garlic, crushed
½ tsp dried oregano
3 cups mozzarella, grated
pinch red pepper flakes
2 tsp chopped parsley
salsa for tipping
1. Preheat oven to 200 degrees. Drizzle cut sides of squash with oil and season. Place cut side down on a large rimmed baking sheet, roast until tender, approx 35 minutes, cool slightly.Using a fork, break up the squash strands, use a dishcloth and wring excess moisture out of the squash.
2. Transfer squash to a large bowl, mix in eggs, garlic, oregano, cornstarch, 1 cup of the mozzarella, parmesan and season, stir until combined.Line a baking sheet with foil and grease , transfer mix to baking sheet and pat flat, bake until golden, approx 25 minutes.
Sprinkle with the rest of the mozzarella, crushed red pepper flakes, and parsley and bake until cheese is melted, slice and serve with a dip like salsa.
